Blueberry Muffin Bread -
Koa has been way into blistering lately. He seems to think we need to turn on the oven and broil something everyday. However, information technology is 110 degrees outside and turning on the oven isn't always at the top of my list of happy to dos. However, he has been begging for blueberry muffins for some reason. And while I am and e'er will be a fan of the Jiffy muffins of my childhood (permit's exist existent they are awesome), I am all about scratch baking when I can.
So, this morning time nosotros just and then happened to accept a container of blueberries in the fridge that were past their "eat straight from a bowl" signal, simply were perfect for a batch of this muffin bread.
This bread is perfection. Not likewise sweetness with perfect bursts of sweet and tart from the blueberries and that streusel topping merely takes it well…over the top.
Yous can totally brand these into muffins if you rather. It would brand almost 12 regular size muffins.
Now, the streusel topping is completely optional, but really, who doesn't dearest a streusel topping? In fact, become ahead an double information technology! (Mom…..)
Ingredients
- 1/4 loving cup butter, cold
- 1/4 cup onetime fashioned oats
- 1/four cup flour
- four tbsp brownish sugar
- 1 tsp cinnamon (optional)
For the Streusel
- 2 cups all purpose flour
- 1/2 tsp baking soda
- 1 tbsp baking podwer
- ane/four tsp salt
- i one/ii cups milk
- iii/4 cup saccharide
- 1/4 cup butter, melted
- one egg
- 2 tbsp vanilla extract
- 1 ane/2 cups blueberries, fresh or frozen (thawed)
For the Bread
Instructions
- In a medium bowl combine the flour, oats, salt, carbohydrate and cinnamon (if using).
- Cutting in the cold butter using a fork or pastry cutter, or just utilise your fingers. Combine until it resembles crumbs. Set aside
For the Streusel
- Preheat oven to 350 degrees. Grease a 9 inch loaf pan and set aside.
- In a large bowl, combine the flour, salt, baking powder, and baking soda. Prepare aside.
- In a medium bowl whisk together the milk, sugar, egg, vanilla and melted butter.
- Pour liquids mixture over the dry ingredients and stir until but combined. There volition still be lumps, and that's ok.
- Carefully and gently add the blueberries and gently stir to combine.
- Pour concoction into loaf pan and top with streusel.
- Bake for 50-60 minutes. Pinnacle should be golden and a toothpick inserted in the heart should come up out clean.
- Allow to cool for 15-20 minutes before cut.

Koa has recently started a phase of "Excuse me I take a question." So now whenever he has something to say, which of course cannot wait a darn second, he says "Excuse me, I accept a question." considering you know, he is a 40 year old man in a 3 year old trunk.
Koa: Alibi me, I take question.
Me: Ok, what is it?
Koa: Daddy parked backwards with his tailgate down.
Me: Ok, aye he did. But that'south a statement, not a question.
Then my smart donkey 3 year former...
Koa: OK and so, excuse me I accept a statement.
Me: Yes?
Koa: Daddy parked backwards with his tailgate down.
Ugh! Seriously? Having a conversation with this child is like having a conversation with a 40 twelvemonth old. Lord aid me. And yes, my child has a weird thing for trucks, and amend nonetheless he now has this affair where he is obsessed with tailgates and whether the tailgate is upwards or down on a truck. He likes them downwards for any reason.

Koa: Mommy, alibi me. I need to go help Pops fix the sprinklers. I'll be right back.
I take my own tools you lot know? Pops gave them to me. He needs me to assist him fix the sprinklers and build the shed I think. I will use my wrench I call back. I'll be right back if you need me.
Oh well, don't let me keep y'all from your big jobs.
Oh and according to him he does have "jobs."
Koa: I get to piece of work you know?
Me: Oh you do? where do you piece of work?
Koa: In an function.
Me: And where is your role?
Koa: Well, in Arizona. Not in United mexican states City. I would have to fly in a airplane to piece of work in Mexico City. I drive my truck to my office in Arizona.
me: Oh actually? And what do you practise at work in your office?
Koa: I make money. (Like Duh Mom.)
Me: And what do you practice with your money?
Koa: I buy stuff.
Me: Like what stuff?:
Koa: Similar..toys…. and trucks… and food. And furniture. (HUH? Furniture?!)
Me: Oh, well and so.
Koa: Yep. That's what I practise.
As I stand up there dumbfounded with a very quizzical look on my confront. Now, where is this furniture he is buying?! And why isn't he using his wrench and fixing things at our house? And where is all this money he is making? See what I mean? forty yr sometime in a 3 yr old body…
